I’ve made these muffins several times, but haven’t made the maple glaze. I did this time, and while delicious, I actually prefer no topping. They were so delicious! Like Beth said, the day after baking they were even better!]]></description>

I also poured more, because you can never have too much! And then I added something else... OK HEAR ME OUT, I put in an avocado! At first I dumped the 4 bags of broccoli into the 9 by 13 pan, as called for in the recipe.  But I knew, even though it would cook down, that I didn&#039;t need that much quantity.  So I put a bag full back in the bag and put it back in the freezer.  I did the full amount of sauce because I like lots of sauce.  At first I used my Vitamix food processor for the cashew cream but it didn&#039;t make it fine enough.  Poured into the Vitamix  blender and it was wonderfully creamy.  Recipe is a keeper, thanks.]]></description>
