Hi Beth, I made your rainbow rice for last night’s dinner (served celeriac schnitzels with it) . We loved it! It was so tasty. We had some left over so today I have mixed it with some mashed potatoes and made veggie burgers out of it. I can’t wait for lunch 🙂 thank you for the recipe.

Is that just craziness? I think I will just go for it. Also, air fried tofu? Did you make that? If so, that should be a blog post! I’ve never heard of it before.
