I love mayo based potato salad. But this caught my eye as something different to serve. I had most all the ingredients on hand soooo why not try it? Yowza!! The chipotle gives it a nice kick. No red bell pepper on hand so I used sun dried tomatoes. I think this is a keeper, tasted good to me!

Okay, okay…you have me. I am the rebel who hates regular potato salad, but then again I’m not big on potatoes unless they are the sweet variety (can we still be friends? ?). But THIS. That sauce speaks to me, and you made it sound so scrumptiously delicious that you pretty much have me convinced to give it a try. Also, it would be pretty awesome if one got the chance to meet Bobby Flay, even if they did go all fan-girl-y (which I would too, BTW). ?
