Yes, I’m still alive. ๐
So, last year I decided to start a food blog – a real one. By “real” I mean I would actually post more than once a month, which is what I did with my former attempt. It started off great, and I was so excited to see it grow and meet all kinds of great people along the way. And then…I became with child. Having been through this once before with the most fantastic little girl alive, I wasn’t sure how pregnancy and blogging would coexist. It turns out, they didn’t. I posted 8 times in 9 months. (See? Back to my once a month ways.) But, as these things go, I knew I wouldn’t be pregnant forever. And just a few days before my one year “blogiversary” in April, my little man was born!
Friends, meet Josh.
He came into the world in a dizzyingly scary fashion, a la emergency c-section. It was literally like something out of a movie. Thankfully, it was a feel-good movie, because he’s perfectly healthy, and sleeps like he’s training for the Slumber Olympics. Dang, I’d win the Gold for sure.
Anyway….it’s almost 6 weeks later and I’m starting to come out of the fog and think about the blog again. Being back in the kitchen has certainly been the main catalyst for this. I’ve been cooking like crazy! Making up for lost time, apparently. It’s been fantastic, except for the dishes. Always the dishes. Here’s a few highlights from my cooking adventures of late.
Waffles with Strawberries and Whipped Coconut Cream. I’m still dreaming about this one.
Vegan Calzones with the Best Marinara Ever. This one is coming to the blog for sure. And Michael will not complain one bit about all the recipe trials.
All the chocolate chip cookies.
And…the Ultimate Vegan Frittata (with a secret ingredient!).
This one requires some explanation. A couple weeks ago I teased on Facebook and Instagram that I was coming back to the blog on June 1. It felt so right. It was a Monday AND the first of the month. Plus it was my dad’s birthday! Happy Birthday, Dad! But, I wanted to come back with an epic recipe. I wanted it to be a triumph. Having stumbled across an amazing culinary discovery, I knew I had my masterpiece recipe waiting in the wings. The Ultimate Vegan Frittata. My first trial was great, but I just knew I could make it better, so I spent my (not) free time trying a couple different versions. The most recent version was the one I chose for the recipe photo shoot, and um, it bombed. Big time. And, of course, there wasn’t enough time to get it right before my deadline.
So…it is technically June 1 (I posted this just before 11pm PST), and I am back to the blog, but I don’t have a recipe for you…yet. But my friends, it is coming, and it’s going to be great. I can’t wait. That wasn’t supposed to rhyme.
I have lots of dreams and plans for this little blog and I’m so excited to share them with you along the way. I’m also steeped in reality, so it’s going to take me a little while to get into the swing of things. I hope you’ll stick around. It’s gonna be epic.

Thank you, Nichole! I’m so glad to be back, though it’s definitely a slower transition than I planned. I’ll get back into the swing of things soon enough. The calzones are whole wheat! I’m still experimenting with my own recipe, but I have to admit that I love the whole wheat dough from Trader Joe’s, so I use that because it’s easy and the calzone prep/assembly can be time-intensive. But…I know that not everyone has a Trader Joe’s, and I want to make more stuff from scratch, so I imagine I’ll be tackling the dough recipe soon enough. ๐

Thank you, Michelle! I’m still tweaking the frittata recipe, it thinks it’s going to get the better of me but it is dead wrong. ๐ In the meantime I’m going to set it aside for a bit (I’m tiring of eating all the tests, ha ha), and post some recipes that actually do work. Stay tuned! ๐
