I am writing this in a stupor, having slept all of three hours last night and still making it to my Barre3 class this morning. It’s a drizzly, grey day outside, I have my Earl Grey tea in my oversized mug, and a warm cozy blanket. And I’m getting a little bit emotional about this update, because it’s a good one.ย
If you’re a fan of the video updates, here you go (it’s short):
Less of Beth – Week 8 & 9 Video Update
The Too Long Don’t Watch Summary
Sorry I was a slacker and didn’t post last week! Holidays, man. Here’s a quick look at some highlights from the past two weeks. ๐

I’ve been in a Thanksgiving food coma for what seems like eternity. I made my vegan broccoli casserole recipe FIVE times in two weeks, and am finally done with leftovers and ready for something else. The first time I made it was for the Thanksgiving feast at Vida’s school. No plant-based option was offered of course, so I made one for us to enjoy together. She loved it!

In case you want the links, here’s what I made:
Apple Cider Glazed Carrots (she eats these like candy)
Vegan Broccoli Casserole
Vegan Mashed Potatoes with Protein-Packed Vegan White Gravy
The next day I made vegan broccoli casserole AGAIN (twice) because I was sharing it on AM Northwest. When I walked down the hall to the studio, who did I run into but David Koechner, from one of my favorite tv shows of all time, The Office. I’d love to say I was cool as a cucumber meeting a celebrity, but I’d be lying. HE was, though. So gracious and kind. NOT like his character on The Office one little bit. ๐

As for exercise I’ve been very committed to closing the rings on my Apple Watch, mostly by going to Barre3. I’ve averaged 5 classes a week since I started this crazy adventure, and have been pushing myself to go deeper in all of the postures. Which means I’m sore a lot, but that also means I get to take relaxing baths and use the gigantic tub in my bathroom for more than a laundry hamper.

As you can see, I’ve got photographic evidence of fitness. ๐ But the real evidence comes in the results, so let’s get to it!
Less of Beth – Weeks 8 & 9 Results
Starting weight: 250.6 lbs
Previous weight: 237.8 lbs
Current weight: 233.6 lbs
Weight lost this past two weeks:ย -4.2 lbs
Total weight lost so far: 17 lbs
Goal weight by 40th birthday on March 18, 2019: 199.6 lbs (basically, just want to get under 200 pounds by that day)
Final goal weight: 150 lbs (aiming to hit this by October 1, 2019)
After gaining a little bit in Week 7, I am PUMPED to be back on track and seeing the scale move in the right direction. I can feel my body changing, my pants are practically falling down (literally), and I feel so proud that I’m doing the work and seeing the fruits of my labor.ย
How’d your Thanksgiving go? What are you struggling with or excited about? How can I encourage you? Comment here or on the YouTube video, I’d love to cheer you on! We’ve got this, friends. <3
See you next Wednesday! Is it really almost week 10 already? <3

Just found your blog and wanted to say wow, great job. I would love to watch your progress. Also, thanks for the recipes, I am going to try the faux ground beef this week and the chickpeas are in my instant pot as I type this. Good luck!
Hi Anne! I’m so glad you found me! <3 I’m so behind on these videos, am actually recording one today! Hope you let me know what you think of the vegan ground beef, and hope the chickpeas turned out well! <3
