We’re in full on “prepare for guests” mode at our casa, so I didn’t do much cooking this weekend. I did make some rather wonderful mexican pizzas on Saturday, but we ate them so fast the photographs would have been of the empty plates. So, in lieu of a recipe or cooking tip from Yours Truly Always and Forever, I’ve put together a list of super awesome Cinco de Mayo recipes for you to check out! These are some of my favorite bloggers ever, so this is also a bit of a crush post. I can admit that.
First up, Cashew-Less Vegan Queso from Minimalist Baker. Dana Shultz is without a doubt my blogging hero. Every recipe she creates is drool-worthy, and I’ve made several of them multiple times. In fact, I adapted her recipe for Vegan Cheez Its when making Nooch-Its! I am making this recipe myself for our Cinco de Mayo fiesta, and I’m so confident that it will be delicious, I have no hesitations recommending it to you.
Next, these Vegan Enchiladas with Cilantro Avocado Cream Sauce from Oh She Glows. Angela Liddon not only has one of the most successful vegan food blogs out there, but she also recently released a cookbook! I was lucky enough to receive the cookbook for my birthday a couple months ago, and can’t wait to make everything in it. It’ll take me a while, but it’s definitely on the to-do list.
Do you love Breakfast for Dinner? I know I do! These Breakfast Nachos from Isa Chandra Moskowitz at Post Punk Kitchen look AH-MAY-ZING. I’ve yet to find a recipe of Isa’s that I didn’t absolutely love. She also just came out with a cookbook, and I also can’t wait to make everything in it.
Ok, so last week was awesome. I’ve only posted two recipes, but have gotten such great feedback and support so far. I simply can’t wait to bring you more. Ok, well I can wait, but I don’t want to. Oh, the queso turned out SO GOOD. And it’s so low-calorie, just what this girl needs! I might try the breakfast nachos this weekend – I’ll keep you posted! 🙂

Yummy, Beth! Thanks for this collection; they all look scrumptious! I’m especially intrigued by the eggplant for the queso dip, and I’m sure I will make it sometime!! I am constantly on the lookout for low-calorie (and budget friendly) ways to make sauces, dips, etc. creamy, and this definitely cuts the mustard!! I’ve never cooked with eggplant before (having heard never-ending complaints about its odd flavor and, most of all, its off-putting texture), but I always kind of wanted to make something with eggplant just to try it, and now this makes me want to try more than ever. And what a genius way to use eggplant! Thanks for the brainwave, minimalistbaker! 🙂
